GROWING: Integrated cultivation (no herbicides, ecological tillage, manual leaf removal, green harvesting), meeting all the requirements for HVE3 (High Environmental Value) certification obtained in 2019.
MATURING :After manual harvesting and careful sorting (using an optical eye machine), the grapes are transferred to concrete vats at a gentle temperature for fermentation in temperature-controlled vats. During the first few days, the wine is pumped over two or three times a day to extract the best tannins. The wine is then aged for 18 months in French oak barrels (1/3 new barrels, 1/3 one-year-old barrels and 1/3 two-year-old barrels).
TASTING NOTES: CLOS des MENUTS is a fruity and powerful wine for ageing, with subtle tannins. A beautiful ruby colour, a very aromatic nose of red berries, liquorice with an elegant woodiness. The palate is refined with notes of fresh fruit supported by a silky tannic structure.
